Pesto d’Alba with Truffle is a new recipe.
We make it with 10% of Black Truffle of the Tuber Aestivum Vitt variety, a truffle that develops in the Langhe Territory precisely from the symbiosis with the Hazelnut groves of the Noble Piedmont Hazelnut PGI. This precious truffle is characterized by an intense, unmistakable, sweet and earthy scent.
Our Truffle Pesto d’Alba combines the creaminess and graininess of its ingredients, creating a fantastic, complete, balanced, appetizing and precious condiment at the same time. Very versatile due to its aromatic and full flavor.
Very enjoyable in consistency, the pine nuts are roughly broken, and for its composition we have selected aged cheeses, with a strong aroma but a balanced flavor, Parmesan and Grana Padano.
A very rich, very aromatic and consistent condiment, excellent as a condiment for fresh pasta, for gnocchi, semolina pasta. Add a little cooking water and mix well to taste, add olive oil and parmesan flakes.
Delicious on eggs and canapés, also ideal with cold cuts and vegetables.
